Why a five-layer base matters

Inexpensive stainless pans often use a single layer, which conducts heat poorly, creates a hot spot in the centre and lets food catch on the bottom. This set uses a five-layer bonded base: stainless – aluminium – steel – aluminium – stainless.

The aluminium layers spread heat quickly and evenly across the base, the steel layer holds that heat steady, and the outer stainless layer is magnetic so the pans work on induction. The innermost layer is food-grade stainless that touches the food directly.

Tempered glass lids with steam vents
